Sausage Casserole


1 tbsp Olive Oil
1 Onion chopped
3 Garlic cloves chopped
3 Rosemary Sprigs stalks removed
200ml Red wine
1tbsp Tomato Puree
1 tin chopped Tomatoes
10 Mushrooms sliced
1/2 pint hot Beef stock
2 Bay leaves
8 good quality Sausages
1 tsp Marmite (this made the sauce nice & rich)
Black Pepper

Casserole dish with lid


Heat oil in casserole dish & brown sausages.

Remove the sausages from the pan and add onions & fry until soft. Add garlic & rosemary & cook for 1 min.

Add wine & tomato puree & reduce the liquid.

Add tomatoes, stock, marmite & mushrooms, bring to the boil.

Add browned sausages, cover & simmer for 1 hour.


You could try adding other veg to this I think Red Pepper & Celery would work well, but I didn’t have any in.
