Sausage Casserole / Recipes, Savoury / By Lewy Ingredients1 tbsp Olive Oil1 Onion chopped3 Garlic cloves chopped3 Rosemary Sprigs stalks removed200ml Red wine1tbsp Tomato Puree1 tin chopped Tomatoes10 Mushrooms sliced1/2 pint hot Beef stock2 Bay leaves8 good quality Sausages1 tsp Marmite (this made the sauce nice & rich)Black PepperAlso neededCasserole dish with lid MethodHeat oil in casserole dish & brown sausages.Remove the sausages from the pan and add onions & fry until soft. Add garlic & rosemary & cook for 1 min.Add wine & tomato puree & reduce the liquid.Add tomatoes, stock, marmite & mushrooms, bring to the boil.Add browned sausages, cover & simmer for 1 hour.TipsYou could try adding other veg to this I think Red Pepper & Celery would work well, but I didn’t have any in.
