Fresh Mackerel with Bay and Peas


2 Fresh (Gutted) Mackerel (per person)
2-3 Bay leaves (either dried or fresh)
Black Pepper
Lime or Lemon Juice

Also needed
Aluminium Foil


Preheat oven to 220°C.

Wash your mackerel under some cold running water, place both on on a piece of aluminium foil on a baking tray.

Season the mackerel with salt and pepper. 

Stuff whole bay leaves in the belly cavity, add lemon or lime juice over all the fish.

Wrap the mackerel in the foil folding the edges in and over so no juices will escape (even when turned over).

Place in the oven for 25-30 minutes or until piping hot all the way through.

Meanwhile start podding the fresh pod peas

Heat in a pan of water and simmer the peas to cook.

Remove the heads and tails of the mackerel (they should come away easily once fully cooked) and serve with the peas and some fresh buttered bread.

As an alternative try marinating your mackerel with a spicy rub of Jamaican Jerk Seasoning instead of salt, pepper, and lemon juice.
