Spicy Autumn Vegetable Soup

Spicy Autumn Vegetable Soup

 

 

Ingredients

  • 1 Onion sliced
  • 3 Leeks sliced
  • 3 Carrots sliced
  • 2 Med Potatoes chopped
  • 2 Parsnips chopped
  • 11/2 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • 2 tsp Curry powder
  • 1.2 l Hot Vegetable Stock
  • 150ml Natural Yoghurt plus extra to serve
  • Parsley to serve

Also needed

  • Blender

Instructions

Fry onion, cumin & mustard seeds in the oil until onions are just soft, add veg & curry powder stir until coated, add stock, bring to the boil & simmer for 30 mins.

Blend until smooth add yoghurt & stir. Serve with a swirl of yoghurt & parsley.
