Roast Vegetables

Roast Vegetables Recipe ADVERTISMENT

 

 

A simple healthy side-dish with plenty of flavour

Ingredients

  • Potatoes
  • Carrots
  • Parsnips
  • Sweet Potatoes
  • 3 Sprigs of Fresh Rosemary
  • 4 Cloves of Garlic
  • Olive Oil
  • Salt & Pepper

Instructions

Peel vegetables and cut into chunky pieces, par-boil potatoes and carrots for 4 minutes add parsnips and sweet potatoes and boil for another 4 minutes. Take off the heat and drain. Separate the potatoes and put back in the pan, shake to "fluff up"

Preheat a good sprinkle of olive oil in a roasting tin to 200°C add vegetables, coating in oil and season well. Remove woody stalks from the rosemary and peel the garlic cloves (crush with the side of a knife) add both to the roasting tin.

Roast in the oven for 40 minutes or until roasted.
