Sausage Casserole

Sausage Casserole

 

 

Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion chopped
  • 3 Garlic cloves chopped
  • 3 Rosemary Sprigs stalks removed
  • 200ml Red wine
  • 1tbsp Tomato Puree
  • 1 tin chopped Tomatoes
  • 10 Mushrooms sliced
  • 1/2 pint hot Beef stock
  • 2 Bay leaves
  • 8 good quality Sausages
  • 1 tsp Marmite (this made the sauce nice & rich)
  • Black Pepper

Also needed

  • Casserole dish with lid

Instructions

Heat oil in casserole dish & brown sausages, remove, add onions & fry until soft, add garlic & rosemary & cook for 1 min. Add wine & tomato puree & reduce liquid. Add tomatoes, stock, marmite & mushrooms, bring to the boil. Add browned sausages, cover & simmer for 1 hour.

Tips

You could try adding other veg to this I think Red Pepper & Celery would work well but I didn't have any in.
